Ultimate Meat Loaf

Having been single and poor many times in my life, I’ve learned to make the ultimate meat loaf.

As good as the initial meal is, I often make this just for the leftovers. There just isn’t anything like a great meat loaf sandwich.

This is also a very good meal for those on a budget.

Ingredients:
*1 lb of lean ground beef
*½ lb of ground pork sausage
*3 slices of white bread torn or crumbled into very small pieces
*½ cup of an onion cut into thin slices and separated
*½ cup of fresh chopped mushrooms (raw or canned)
*½ cup of fresh chopped carrots
*3 cloves of garlic chopped fine
*1 tablespoon of dry mustard
*½ tablespoon of Old Bay Seasoning (or more to taste)
*½ tablespoon of coarse ground black pepper
*1 teaspoon of dried basil
*1 teaspoon of dried sage
*2 tablespoons of Worcestershire Sauce
*1 tablespoon of horseradish
*1 egg beaten
*1 cup of whole milk
*1 cup of your favorite Barbecue sauce
*Oil cooking spray such as Pam

Directions:

Place all of the ingredients except for the BBQ sauce in a large mixing bowl.

Use your hands to mix the ingredients making sure they are fully incorporated.

Coat the surface of a loaf pan with an oil cooking spray. Place the meat mixture in the loaf pan and top with the BBQ sauce.

Bake uncovered in a pre-heated 350 degree oven for 1 ¼ to 1 ½ hours. Let it rest for several minutes.

I prepare a version without garlic and onions for Melissa sometimes. Even without these flavors, this meatloaf is delicious.
